Happy springtime everyone. Here in Seattle it has been a pretty darn beautiful start to the season with buds blooming, leaves appearing on trees and the sun peeking out here n’ there with a nice chill in the air - all making for a perfect time for delicious tea.

The change in season is so welcome and always inspires an adventurous palette for new tastes in tea. It’s ultra premium deep steamed green tea. If you love our japanese green teas, you will freak over  this ultra premium high grade deep steamed tea. Not on our usual tea menu, this is a rare treat, for a limited time only.

  • This is top grade organic green tea from Japan that has been steamed 2 to 3 times longer than regular sencha for a deep rich slightly sweet taste and aroma. This special tea is farmed fresh and lovingly handharvested in Uji Kyoto Japan then handcrafted in small batches.   • Great care went into growing, picking and crafting this tea. If you buy some loose leaf, treat it gently, brew it with love and it will taste divine. Use medium temp water 196˙ with  3g teaspoon of tea per 6oz for only 30 seconds. Just a quick steep and its delicious. It’s best brewed in smaller quantities 6oz at at time. RemedyTeas carries the most delicious green teas. But when you are talking about “pure” green tea, our Japan steamed green teas are particularly incredible. What generally makes Japanese green teas so great is that they are produced by picking tender leaves and gently steaming them which creates a deep, fresh greenness that is unique, nutritious and delicious.  Most folks who have drank green tea tasted a Chinese green tea. While China is the “mother of teas” and produces some wonderful green teas, the steamed teas from Japan differentiate in such an incredible way.  Because of wok drying Chinese green teas tend to be brisk, slightly bitter, slightly smokey or nutty while Japanese steamed greens are vegetative, spinachy, sweet, fresh-cut-grass kind of green. If you have never had a nicely prepared steamed green tea, you MUST!  Even better, Japanese green teas for the most part have greater levels of green tea goodness (higher levels of polyphenols, antioxidants, vitamins and minerals) because of the quick delicate steaming process.   • 37. Precious Dew  -  Pure organic “Gyokuro” from Japan. The best leaves from the finest plants are used to produce this special tea that brews a jade green color with a very sweet, creamy, taste. This premium tea undergoes a shade grown process that enhances the deep green color, flavor and anti-oxidant properties of each delicious cup.
  • 38. Sencha  - Pure top grade organic “Sencha tea” from Japan. This tea is anything but common with a distinctive green leaf and delicious green-gold cup with a fresh, grassy aroma and smooth taste. Sencha is celebrated for its delicate sweetness, flowery-green aroma and vitamin-packed freshness.
  • 39. Brown Rice Tea  - Pure top grade organic “Genmaicha” from Japan. Green tea meets Rice Crispies in this favorite that is as rich in flavor as it is rich with history. A traditional blend of fine quality Sencha green tea and toasted rice produce a warm brown rice aroma and fresh grassy taste.

  • 41. Late Harvest Tea   Pure organic “Bancha” from Japan. You won’t mind being “late” after sipping this mild Japanese green tea. Large, pale, coarse green leaves brew a mellow, tangy, grassy, oceanic cup that has a sweet aroma.
  • 42. Roasted Green  -  Pure organic “Hojicha” from Japan. One of the exceptions for a Japanese green this is not green and steamed, but roasted. Very low caffeine and never bitter, you wont believe you are drinking a green tea. Charcoal roasted to perfection, the browned leaves produce an amber brew with rich toasty, caramel-like flavor.
  • 43. Fine Matcha  -  Finely ground premium organic green tea from Nishio Japan. Whipped into potent frothy liquor, the “espresso of green tea”, is creamy, oceanic and very fragrant. A healthy boost for mind and the body containing powerful vitamins and minerals; matcha may be the healthiest of green teas. iced already?

With the sun coming out here and there people have been craving the taste of iced tea. While it’s a bit early, we have had a lot of people asking for it so we thought we’d help. Iced tea is available at RemedyTeas for you to get a fix what you are craving and for easy brewing at your home, here’s three easy ways to perfect iced tea.

  • 1) Brew It Chill It -  As simple as could be brew your tea as normal, let cool and pop in the fridge. Make a pot the night before and you’ll be drinking great iced tea all day long.  Your iced tea will keep for a couple days then slightly loses flavor after day 3 usually. Fresh is best!
  • 2) Coldbrew  -  Brewing with cold water is different but can be effective. Cold brewing can be done in small or large batches. Brew tea in the fridge overnight hours and you’ve got great iced tea brewed with no heat. Cold brewing requires simply a couple containers to brew tea and store tea in and a way to strain leaves away. Cold brewing has a slightly lighter flavor, but will have released no astringency (no bitterness) and the tea will always be clear and beautiful.
  • 3) Handshaken  - This method is a “single cup” method not for use in high volume/capacity but for for the cup-by-cup basis. Make tea by the glass. This method is essentially making a concentrate, then quickly diluting it over ice. Use double the amount of leaves that you may normally use per cup, brew with normal temperature and steep times. Pour tea into an ice filled cocktail shaker or glass. Shake tea and dispense into a cup over ice making instant iced tea. Instant Yum.
